Very well established in Asia, the fluffy pancakes craze is progressively settling in Paris! Recently, addresses dedicated to this gourmet specialty from Japan have been flourishing in the capital to the delight of our taste buds. The latest one? Fluffy Panda. Located in the 3rd district of Paris, this small shop is really worth a visit. Behind Fluffy Panda, we find Diane. After several years in the restaurant business and in particular in the bar business (Candelaria, Mary Céleste), Diane unfortunately found herself in a complicated period when the health crisis arrived.

Confinement obliges, the young woman occupied herself as she could. She started making fluffy pancakes at home. But the technique was not mastered at first. She had to be patient and persistent to make a fluffy pancake the right way. What started out as a hobby and a personal challenge ended up being a professional project for Diane. Once the health restrictions were lifted, the self-taught woman decided to open her own establishment dedicated to fluffy pancakes in Paris. And so it is in the 3rd district that Diane chose to set up in March 2022.

But in fact, what are fluffy pancakes? Coming from Japan, they are puffed pancakes, thick, soft and ultra light, with a few toppings added. For this address, Diane has imagined no less than 6 recipes: with powdered sugar, chocolate sauce, salted butter caramel, crème brûlée and of course pandan. Of course, everything is homemade and made in a minute, right before your eyes.

In concrete terms, you have to wait about 10 minutes before you can eat your fluffy pancake. Because yes, the egg whites have to rise to the top. Then, Diane places them on special baking sheets and waits five minutes before turning them over, so that they are properly browned and cooked on each side. Then it's time to add the final ingredient (chocolate, caramel, pandan) to make the customer salivate even more. On our side, we opted for the fluffy pancake with pandan cream that we highly recommend. The pancake is ultra light and tasty. As for the pandan cream, nothing to complain about, it is perfect with notes of almond, enhanced with coconut milk.

If some people like to watch Diane make them, others prefer to wait quietly on the terrace with a drink in hand. Diane also offers a few drinks, including an excellent Thai-style cold tea or a cold coffee, also made in the Thai style.

To top it all off, Fluffy Panda offers fluffy cakes, always homemade. Your choice? The plain one or the chocolate one.
For the future, Diane plans to create other recipes such as fruit fluffy pancakes for the summer season, but also, and why not, savory fluffy pancakes. This promises to be a tasty experience!
