Cocoa and chocolate lovers beware: Jade Genin has opened her first boutique in Paris, under her own name. The chocolate shop is located on the mythical Avenue de l'Opéra, overlooking the emblematic monument of theOpéra Garnier, once known as the wedding cake.
Jade Génin's creations can now be tasted at 33 avenue de l'Opéra, close to Cédric Grolet's Pâtisserie-salon de thé. A boutique she wanted in the center of Paris, away from her father's stores, to mark her independence.
At first glance, Jade Genin was seduced by the façade. She was also impressed by the interior, which opens onto the workshop on Rue Danielle-Casanova. The workshop, open to the view of strollers, is linked to the boutique by a curved corridor, one tracing the horizon of the other. In this way, you can see the craftsmen at work, a little like backstage before the performance in the boutique.
For her boutique, she teamed up with designer Khaled Kolsi to create a space whose primary aim was to respect the raw material of chocolate: its magic. White and gold await you in a place inspired by the Taj Mahal and ice skating, two of Jade's passions.
For Jade, chocolate is a material like no other:"When I work with chocolate, I lose track of time. I forget everything, fears or regrets, appearances or futility... I surrender myself to it, completely absorbed... With chocolate, everything in me is occupied. Hands, mind and senses bend over its birth."
Fascinated by its gifts for metamorphosis, she never ceases to observe it, from liquid to solid, from dull to shiny, playing with temperatures and reflections... " Maybe I understand him because he's like me and Willy Wonka : confusing and hard to tame! But rigorous in its madness. Chocolate can go from being as hard as the table to as melting as you like. Honestly, who else can do it?
So the question arises: what does Jade Genin have to offer us in her chocolaterie? We find Paris in chocolate. Here we have chocolates in the shape of the Concorde obelisk and the Louvre Pyramid. The chocolate bonbons form pyramids, with light-reflecting faces and a beautiful shine, synonymous with good chocolate. A shape she particularly appreciates, reminding her of one of her father's creations in the shape of the Louvre Pyramid, which left a lasting impression on her in her youth.
For her chocolate bonbons, she uses chocolate from Xoco Gourmet, a producer and roaster of exceptional chocolates found only in a few kitchens in Paris: Mayan Red, from Honduras, has a full-bodied, fruity taste of red fruits. A chocolate she blends with Valrhona to soften the whole and not mask the taste of the ganaches.
And while we're on the subject of ganaches, there are some real flavor bombs waiting for you. Made without dairy products, these juice-based fruit ganaches, which change texture according to the flavor, reveal all their flavors without masking. We highly recommend the lemon, whose zest is incredibly present. We also love the ginger version, the almond praliné with green spices (anise and fennel) and Tahitian vanilla.
For Christmas, let yourself be tempted by the sublime gift boxes that let you discover beautiful flavors like the chocolate cones of fir that transport us to the forest. Count on 15€ for a box of 15 pyramidions, 36€ for 45 and 65€ for 90 chocolates.
Also on the program: gourmet rochers, praline crocodiles, low-sugar marrons glacés, small bars of dark or milk chocolate, and an oleaginous-free barley praline spread.
Of course, like her father, the emphasis here is on quality and sincerity above all else. All colorants are natural, and no artificial additives, preservatives, flavors or flavor enhancers make it past the workshop door. At Jade Genin, we don't want to adulterate a quality product. Like her father, she advocates respect for the product, but infuses it with her own world and tastes. From candies infused with Asian spices, to chocolates and floral scents from the Orient, there's no end to the journeys our taste buds can take.
