Signature breads include low-gluten petit épeautre, rye pie, Scandinavian bread and seasonal loaves.

Tranché uses top-quality ingredients, such as organic flour from Moulins Bourgeois, an independent, family-run mill supplying 100% French cereals, and Montaigu AOP Charentes-Poitou butter. Fruit and vegetables are sourced from Broko, a new-generation supplier that democratizes access to fresh produce and short distribution channels.

In addition to breads and viennoiseries, Tranché offers a wide range of gourmet snacks, including sandwiches such as the classic Jambon-Beurre-Comté or the Club Sandwich poulet-épinards. Tranché regularly partners with players on the food scene, such as Margot Masson and Aymeric Pinard, who have created a Grilled Cheese with sourdough bread, Saint-Nectaire, mozzarella, mushrooms and caramelized onions.

The Tranché bakery has been designed as a place to live, with warm decor, comfortable spaces and a welcome adapted to teleworkers, families and passers-by. The store offers both takeaway and on-the-spot service, with the option of Click&Collect ordering or delivery anywhere in Paris.
A passionate team at the helm
Tranché was founded in 2022 by Marie Debié, who worked her way up through the Big Mamma group and obtained a CAP in bakery on her own. Tranché co-founders Marie Debié and Augustin Rivoire are supported by a talented team, including Alexis Ragot, head baker, and Alistair Smith, pastry chef and Meilleur Apprenti de France 2021.
Workshops to share your passion for bread
Tranché aims to share its passion for bread and natural sourdough with the general public. The bakery offers regular workshops for adults and children, led by Marie Debié and her team of experienced bakers. Participants can learn the secrets of kneading, shaping and baking, and leave with their own creation.

Concerned about its environmental impact, Tranché has taken several initiatives to reduce its ecological footprint. The bakery favors local suppliers and short circuits, favors biodegradable and compostable packaging, and has set up a deposit system for reusable containers. What's more, the team works with the Too Good To Go association to prevent food waste by offering unsold products at reduced prices.
