Recipe for the garden tomato salad, parsley pesto and fresh goat cheese brousse by Armand Arnal

For 4 people

Ingredients:
2 yellow tomatoes "Coeur de boeuf
2 red "Téton de Vénus" tomatoes
2 Black " Crimean Black " tomatoes
2 Green Zebra tomatoes
1 Red Tomato
2 bunches flat parsley
1 Clove of garlic
15cl Olive oil
150g fresh goat cheese
Salt and pepper

Preparation:

Wash and remove the stems from the parsley.

In a blender, add the stemmed parsley, a chopped garlic clove and the fresh red tomato.

Blend and gradually add olive oil, the consistency should be creamy.

Wash and quarter the tomatoes and place them in a salad bowl.

Season with salt, pepper and olive oil.

Spoon the parsley pesto and fresh goat cheese into the salad bowl just before serving.
