Head for the République district to discover B. Bell, the little shop that honors French-style broches with ultra-fresh products, impeccably sourced, and original recipes to match!

A stone's throw from the Place de la République, a small, deep-blue shop emanating the scent of grilled meat beckons passers-by. It's called B. Bell, in homage to the most daredevil French actor of the last century, Belmondo. Inside, beautiful spits turn on themselves and bask in the glow. That's all it takes to make us want to go inside.

The owner, Stéphane, with his legendary bonhomie, welcomes us and explains the idea behind B. Bell. Bell: to offer beautiful French-style kebabs to Parisians. Please don't use the word "kebab" here, it's not the idea! On the sourcing side, impeccable French meats, a far cry from Bernard de la Villardière's alarmist reports.

This quality meat is skewered on site every morning and roasted throughout the service; the sauces, most of whose recipes are kept secret, are homemade, the bread is baked on site, the cheeses are AOC and the vegetables are fresh from the market. Here, the quality of the products is paramount, but the recipes also have their say.

In terms of recipes, you'll find the classic Tradition broche, with milk-fed veal and smoked turkey, herb yoghurt sauce, salad duo, tomatoes and red onions; the Parisienne, with the same meat duo, mustard and honey sauce, Comté d'AOC, grilled mushrooms, salad duo, tomatoes and red onions; and the Façon Mignon broche, with barbecue sauce, Ostari, onion confit, salad duo, tomatoes and gherkins. Did you say original?

For lovers of fine poultry, B. Bell also offers recipes based on delicious marinated chicken, ultra-melting and spicy to perfection, here A La Basquaise, with grilled peppers, chillies and tomatoes; there Suprême style, with herb yoghurt sauce, honey-mustard, grilled mushrooms, salad duo, tomatoes, red onions and cabbage.

And even beef lovers will find something to their liking with the beef and carrot brochettes (yes, yes!), as will vegetarians with their own special brochettes based on marinated vegetable palets or brochettes. Accompanied, of course, by a hearty helping of crispy, homemade fries, just like the rest of the menu!

As you'll have gathered, B. Bell reinvents the art of the French brooch without the fuss. Just with a smile on both sides of the counter!
