Although lasagne was already mentioned by the Romans in their culinary writings, the version we know today really took shape in medieval Italy. In Bologna, the first manuscript recipes speak of layers of fresh pasta alternated with sauces and cheese - at the time, meat was a rare ingredient, reserved for special occasions. It wasn't until the Renaissance that lasagne began to resemble the generous dish we know today.
Over the centuries, lasagne has adapted to local tastes and traditions. In southern Italy, for example, it's made with ricotta, hard-boiled eggs and sometimes dumplings, but the alla bolognese version remains the most famous, with a long-simmered beef ragù and a creamy béchamel sauce, baked au gratin with Parmesan cheese.
