In terms of savory treats, Chef Sébastien Monceaux unveils a “Coeur de Saint-Valentin” [Valentine’s Day Heart]. This creation to be shared is made of poached scallops from France, accompanied by crunchy vegetables (carrots, celery, green apple and thinly sliced ginger), served with a lobster bisque ice cream and flavored with cilantro, verbena and lemon, the whole topping a crispy almond biscuit and coated with a jasmine milk padded cloud with Keta salmon eggs from the Pacific Ocean.
For lovers of sweet treats, go for the collection of 9 Bisous de chocolat – milk chocolate kisses filled with a ginger praline or the collection of 9 coeurs – heart coated with milk chocolate and filled with a praline spiced with ginger and small dark chocolate hearts filled with a fruity raspberry and rose ganache.
Finally, Fauchon even offers macaroons with surprising flavors: sweet potato-vanilla and mango-redcurrant.
