For his new Paschal creation, and after Nolinski “Piou-Piou”, then the "Lapin de Pâques" Yann Brys – head of sweet creation at Evok Hôtels Collection and Meilleur Ouvrier de France, designed the Nolinski's chicken.
Revisited on the occasion, the Easter chicken by Yann Brys reveals wings filled with smooth praline as well as feathers flavored with strawberry.
Moving on to the composition, Yann Brys bet on 63% dark chocolate from Peru.
