Many Île-de-France inhabitants getting in the countryside by going to Fontainebleau to see the magnificent forest. But Fontainebleau is also filled with gems like this Michelin-starred restaurant that is very appealing. L'Axel, so is the name of this gourmet restaurant set a stone’s throw from the castle and indulging us for already 10 years.
The chef, Kunihisa Goto has quickly been rewarded 3 chef’s hats by Gault & Millau shortly after opening, before getting his first Michelin star. The chef shares his ambition to get a second star. He does not rest on his laurels either since after opening his second restaurant called Fuumi, in 2021, he opened a pâtisserie in the same street. Called L’A Patisserie, this new indulging spot in partnership with pâtissier Ayako Kishi serves a nice mix between sophisticated and Japanese-inspired creations.
For the restaurant’s 10th anniversary, we went to discover this fantastic venue mixing thoroughly selected and seasonal produces, magnificent wines, and sophisticated French cuisine influenced by Japan.

Coffee and petits fours
We love how perfect the cooking is, the sophistication of dishes and the lovely pairings. We loved the Orsen egg, lentils and truffle, marvelously matching the perfectly cooked Wagyu beer and its thickened and delicious sauce. As for dessert, we were impressed by the puffed sugar bubble that let you see through the delicious passion baba and fresh fruits with hibiscus and cinnamon, we love it!
In other words, a gourmet restaurant to visit again and again!
