Burgal, Alain Ducasse’s plant-based burger to enjoy in Bastille

Alain Ducasse just opened on Place de la Bastille an original stand called Burgal. On the menu, some uncommon plant-based burger!

Alain Ducasse continues walking the path he started at the Plaza Athénée with his naturality concept. This early spring, the multi-Michelin star-winning chef unveils a new idea likely to be a hit! On the Place de la Bastille, Alain Ducasse opened Burgal, a food stand set inside an 8sqm Parisian booth furbished on the occasion.

On the menu in this surprising venue, Burgal, a 100% plant-based burger! On the outside, vegan bun – the first special feature – as buns usually are made with egg, butter and milk. Inside, a plant-based patty instead of meat, based on zucchini, carrot, parsnip, lentil, onion and quinoa.

But that is not all! Buns are filled with uncommon condiments, such as eggplant caviar, spicy vegan mayo, as well as colorful pickles. As for sides, Burgal serves vegetable chips and crunchy chickpeas. As for sourcing, everything is flawless with cereals and vegetables made in France for as little carbon footprint as possible.

Furthermore, Alain Ducasse’s plant-based burger is not new for some of you if you were at Taste of Paris 2019 festival. As a matter of fact, it is during this food festival that the idea of this plant-based burger took seed in Alain Ducasse’s mind, with his “toasted cereal bread, Palace of Versailles vegetables” that won the award for Best Dish!
