Draped in its immaculate white coat, this 2025 Christmas log is a nod to the childhood of the pastry chef, who hails from Lorraine. He used to pick delicate Christmas roses, winter flowers that brave the cold, in the forests of his native region. Designed as a wooded and floral sculpture, this ivory-toned creation with a velvety, frosted texture evokes the sparkle and purity of freshly fallen snow. A visual poem that immediately transports you to the cozy atmosphere of the holiday season.

When tasted, the dessert reveals a symphony of textures and flavors that are deliciously nostalgic. Round and comforting notes take the palate on a journey marked by generosity and sweetness. Enveloped in a generous Madagascar vanilla bavaroise, the log reveals a delicious vanilla crème brûlée at its heart, which the chef has mischievously paired with hazelnut caramel and Tahitian and Madagascar vanilla caviar. A marriage of vanillas that brings round, floral, and deliciously indulgent flavors to the creation.

To round off this gourmet experience, a crispy Tulakalum dark chocolate and gianduja biscuit, enhanced with a hint of fleur de sel, adds crunchy and slightly salty notes. A biscuit made with Burgundy cazette flour completes the tasting with delicately roasted notes. This combination of textures, ranging from melt-in-the-mouth to crispy and soft, is reminiscent of those comforting moments that we particularly enjoy during the festive season.

For those who can't wait, Michael Bartocetti and his team will be offering their signature Yule log as a plated dessert to kick off their Christmas tea time. This convivial moment will be offered in the Galerie starting December 5, 2025, in the refined setting of the hotel. It will be an opportunity to get a sneak preview of the flavors of this exceptional creation in a cozy and elegant atmosphere, conducive to sharing and indulgence.
