Once again this year, the flagship store next to Le Bon Marché Rive Gauche presents this classic Epiphany treat in both sweet and savory versions!
Baking, the classic frangipane galette undoubtedly remains the reigning champion, but its throne is now being challenged by a chestnut-filled version that shakes things up. Hidden beneath a homemade, perfectly crisp inverted pastry crust, lies a velvety almond cream blended with chestnut chunks and whipped cream. Fresh from the oven, the warm galette is brushed with a syrup infused with candied chestnuts, adding a final touch of sweetness. An elegantly crowned alternative for purists eager for a dash of creativity without straying from tradition.
In the pastry realm, this season invites a refined reinterpretation of frangipane, elevated with a hint of Cuban rum and whole Provençal almonds. Thibault Leroy, the pastry chef at La Grande Épicerie de Paris, pays homage to classic recipes, when rum naturally found its way into galettes and even crêpes. Though it vanishes during baking, it leaves behind a delicate aroma that enhances the almond filling. Hailing from a renowned Maison, this rum reveals subtle notes of coffee, vanilla, and toasted almond upon tasting. As for the presentation, the chef adorns the tart with a homemade inverted puff pastry disc, caramelized and intricately scored like crocodile scales—an animal totem and emblem of the Maison, nodding to Cuba’s shape. Ceramic fèves, crafted in Paris, complete the scene… and one of them conceals a golden crocodile. The prize? A trip to Cuba for the king or queen of the day.
In the kitchen, chefs are redefining the traditional galette with a savory twist, packed with bold flavors and personality.
