L'Eclair de Génie is a new-generation patisserie with a modern decor, which opened a few days ago on rue Pavée in the Marais district. It's a special store, since it's the only one devoted exclusively to éclaires and chocolate truffles.
But not just any éclairs, and not just any truffles. Christophe Adam, former Creative Director at Fauchon, unveils a fabulous collection of creations as diverse as they are varied. In 10 years at Fauchon, he has revolutionized the éclair, restoring its reputation with creations as sublime as they are delicious.
And so, quite naturally, Christophe Adam has made the éclair his pastry of choice in this new Parisian boutique. After opening Adam's in Bercy Village and then rue Casanova, in the 1st arrondissement, our king of pastry continues to build on his success. During our visit, we discovered 12 different éclairs. Some will remain staples, while others will see the light of day as seasons and events dictate. While the Santa Claus éclair with sparkling milk is a hit at the moment, look out for the Saint-Valentine's éclair and the Gayride éclair in the near future.
And because today's pastry chefs reveal their genius in visual creation, Christophe Adam will soon be offering us art-themed éclairs. So, what do you think? Will he offer us Mondrian, Picasso or Mona Lisa éclairs? To be continued.
Current bestsellers include the vanilla pecan éclair, the coffee éclair, of course, the salted butter caramel éclair, and the rose bonbon, with its scent of roses and marshmallows.
If you're looking for something new, try the milk chocolate-mango-banana éclair, the lemon-yuzu éclair reminiscent of lemon tart, or the pistachio-orange éclair.
As for the chocolates, which for the festive season are adorned in a pretty glittering dress, the flavors are just like those offered in the éclairs. You'll find orange-pistachio truffle, soft caramel with yuzu or praline. Attractive gift boxes make them a superb gift.
When it comes to creation, everything is made on the spot, with rigor and attention to detail. Both the pistachios and the pralines are homemade. Christophe Adam makes a point of using quality French products whenever possible. He even tells us that the caramel eclairs in the window are made with butter brought in by his mom from a small producer. Thanks Mum, that was great!
The vanilla and pecan éclair is a real treat. We love the lightness of the cream, which reveals a genuine Madagascar vanilla flavor (with vanilla beans), and its "not too sweet" side. As for the orange-pistachio éclair, it's just the right amount of freshness. As for the salted butter caramel, with its stronger flavor, it delighted the taste buds of our expert editors.
