We set off to discover this formula, basket in hand, with Chef Jérôme Coindre, through the Marché Wilson on the Trocadéro side. Fresh, delicious, seasonal produce, sourced in part from local producers. At the market, the chef lets himself be inspired by the moment, according to the good produce on offer and our tastes.
The journey then continues to the Ritz Escoffier school, where we transform these discoveries into a four-course menu, under the watchful eye of the chef, who shares his tips and tricks.

L'Escapade au Marché is more than just a cooking class. It's an 8-hour immersion in the life of a chef, where we learn how to select fresh produce from the market, develop recipes, make them, and finally enjoy our creations in a joyful and relaxed atmosphere.
We learned how to choose our fish, prepare broad beans and peas, turn an artichoke or even make a simple sage butter to accompany our fresh fish.
