Does Finnish cuisine appeal to you? After a trip to Finland, renowned chef Justine Piluso has created a unique dish that she plans to offer you a taste of during a freetasting session on Saturday, November 29, and Sunday, November 30, 2025, at a special pop-up event in Saint-Ouen, in collaboration with Visit Finland. This "recipe for happiness" combines rye flour, dill, gravlax-style marinated fish, lingonberries, and mushrooms.
Created after spending time with the inhabitants of the country considered to be the happiest in the world, this dish represents an initiatory journey experienced in Tampere, 180 kilometers north of Helsinki in October, which recounts, in its own way, the richness of the Finnish land, the simplicity of the gestures, and the intensity of the flavors.
Justine Piluso discovered, in contrast to her Mediterranean cuisine, that of the North, alongside chef Juuso Ahvenainen, exploring the undergrowth in search of wild berries, herbs, mushrooms, and young shoots, and interacting with those who bring local gastronomy to life, with humility and respect for the product. You can meet the chef and taste her dish for two days, from noon to 3 p.m., with a limit of 30 places per hour, registration required.
