A shop where people come to buy butter, but also to taste it, compare terroirs, and leave with a few rather unexpected pairings: that’s the idea behind Le Butter Shop, nestled in the 15th arrondissement of Paris. Since its July opening, the concept dreamed up by Erwan Leo has made this staple of French fridges its sole star.
Behind the counter, a lineup of more than thirty butters keeps coming and going. Doux, demi-sel, salé, cru, pasteurisé, traditionnel ou extra-fin... The Butter Shop works exclusively with producteurs français, notably small family farms based in Brittany, the Nord-Pas-de-Calais, or the Loire Valley.
Alongside the most classic references, you’ll find far more surprising recipes. White truffle, yuzu and Espelette pepper, lemon, chocolate, vanilla, dates or even raspberry! Butter here becomes a playground, with a strong emphasis on the tasting.
Erwan Leo's idea is precisely to treat the product the way a sommelier treats wine. Each reference carries its origin, its production method, and its own set of characteristics. The shop thus profiles the producers, their histories and techniques, in order to put a name and a terroir behind every block.
Visitors can also taste spoonfuls of the butters and ask for advice before choosing. The team especially recommends sweet-and-salty pairings: date butter with a red meat, vanilla butter with a hard cheese like Comté, or raspberry butter simply spread on a slice of toast! Several sizes are available to satisfy curiosity to varying degrees, with formats of 10g, 125g, 500g and up to 1kg!
Le Butter Shop also rounds out its mottes with a selection of wines and products from épicerie fine, continuing in the same spirit of pairings and tastings!
