Japanese wagyu beef is in the spotlight in Paris, from December 4 to 24, 2023. This meat, considered a real gem in Japan, is of unparalleled quality and flavor , and those lucky enough to have tasted this exceptional product still remember the way it melts in the mouth.

It's only been a few years since wagyu was authorized for import into France. The rules of breeding make wagyu special and distinguish it from other beef. Each animal is fattened for almost twenty months on rice straw, wheat, soya or corn, and receives affectionate care from its breeders, who cherish each individual steer. As a result, the animal is serene, and the finesse of its meat is enhanced.

Several times a year in Paris, Japanese wagyu is honored through collaborations with Parisian chefs and restaurants. This December, 6 Parisian restaurants are taking part, offering dishes based on Japanese wagyu.

The celebration of Japanese wagyu takes place in the following restaurants:

  • Chez Pages from December 11 to 17, 2023, with wagyu beef risotto, comté, horseradish-inspired sushi and yellowtail
  • Chez Lolo Bistro from December 4 to 10, 2023, with a wagyu flambé, tuna belly ragu, vegetables in Xo sauce, accompanied by a flatbread with brown butter.
  • Chez OJII from December 11 to 17, 2023, with Sukiyaki wagyu and autumn truffles, wagyu flank steak, watercress, salsify, shiitake, shimeji, eringi and egg yolk
  • Chez Marie Akaneya from December 18 to 24, 2023, with Ito Ranch du boeuf Matsusaka, filet de nigiri
  • A la Table du Caviste Bio from December 18 to 24, 2023, with pan-seared wagyu rib-eye, wasabi béarnaise sauce and Japanese vegetables
  • Chez Vertus from December 4 to 10, 2023, with a charcoal-coated wagyu rib-eye, ancient vegetables, potato millefeuille and Jerusalem artichoke purée
