While the Michelin Guide has been celebrating chefs for decades, it wasn't until 2019 that the famous red guide put the spotlight on sommeliers, pastry chefs and chefs de rang, who have just as much merit and are just as involved on a daily basis as chefs.
For the seventh year running, pastry chefs from restaurants and palaces have received an award, the Prix Passion Dessert 2025, initiated in partnership with Valrhona. In addition to taste, the criteria include the supplier's production conditions, the impact on consumer health, and respect for the seasons and the environment.
Last year, 8 pastry chefs were honored by the Michelin Guide, including 2 Parisian chefs(Max Martin at Pré Catelan and Aurora Storari at Hémicycle).
In 2025, the Michelin Guide has chosen to reward 10 restaurant and palace pastry chefs for their creations and commitments, including 2 Parisian pastry chefs: Manon Gouin of starred restaurant Mallory Gabsi and Jorice Sardain of restaurant Fana.
The 8 other award-winning restaurants are : Blue Bay Marcel Ravin (Monaco), JY'S (Colmar), Albert 1er (Chamonix), Auberge du Vieux Puits (Fontjoncouse), L'Inattendu - Domaine de Locguénolé (Kervignac), Rozó (Marcq-en-Barœul), Casadelmar (Porto-Vecchio) and Christopher Coutanceau (La Rochelle).
