Hilton hotel group extends their presence in Paris with the opening of a new hotel.
The hotel Canopy by Hilton Paris Trocadéro opens in Paris 16th arrondissement this May 11, 2021.
It is with this very hotel, Hilton launches their lifestyle brand, Canopy, in France. Already present in Croatia and Iceland, the brand – already owning around thirty hotels – has entered the French – and especially Parisian – hotel trade market.
Canopy by Hilton Paris Trocadéro overlooks Paris rooftops and offers unobstructed views on the Eiffel Tower, set across. Its indoor design is inspired by the neighborhood’s story, the Trocadéro and its industrial past from the 1930’s. The 123 bedrooms of the hotel feature a signature bed fitted with the Serta Cool Balance technology balancing the body’s temperature and reinforcing the center of the mattress. As well as a Nespresso coffee machine.
This hotel is very welcoming. Common spaces are wide. Furniture impressive, such as these big armchairs, enabling to naturally lay out the tables. On the shelves, the chef's homemade pickles rest before being eaten. Fomr this main place of food, you can see the kitchen and the huge oven.
Symbol of the hotel, the oculus is seen from the entrance and is found everywhere, in the bedrooms and even on the food menu.
Breakfast is served – as soon as it is allowed – at Canopy Central. It will also be delivered in the room. Canopy by Hilton Paris Trocadéro also own a restaurant, L’Esprit Nouveau, serving classic French-inspired dishes, made with local and seasonal ingredients. Chef Robin Kybarek chose to only work with French and local produces as long as he can. He also offers a savory Signature éclair based on goat's cheese, and spicy carrot marmelade. As an appetizer, he also created some dill cookie topped with smoked salmon, snow pea cream and wasabi, as well as some big potato chips with coppa cream and a bit of summer truffle. So good.
Moving on to the sweet part, Kubarek has created some strawberry tartlet with Gariguette strawberry and lime zest marmelade, topped with wild strawberries topped with some Italian meringue and yuzu veil.
The chef's signature dessert? A trompe l'oeil truffle. This sweet chou bun looks like a mushroom and actually hides some charcoal chou pastry, craquelin, white chocolate/summer truffle ganache whipped with light cream. An exquisite dessert that has nothing to envy desserts by the king of trompe l'oeil, Cédric Grolet.
Committed to a zero-waste approach, Kubarek works a lot with plants.
And as the L'Esprit Nouveau restaurant has not opened yet (scheduled on June 9), Canopy has developed a call & collect offer called "Bring Me Home". This takeout offer by Chef Robin Kubark, dedicated to locals (still sticking to a local anchoring), includes 6 dishes (2 starters, 2 main course, and 2 desserts). On the menu, seabream, smoked duck, beef, and the famous signature truffle for dessert.
The asset of the hotel? Its rooftop and panoramic bar offering views on the Eiffel Tower where one can enjoy cocktails and dishes to share, such as cold cut boards by Olivier Brosset and cheeses from a farm in Cergy-Pontoise. A very verdant area can welcome up to 90 people and will soon be the place for many events.
Hilton has also planned to soon open two Tapestry hotel with Belgrand Hotel Paris Champs Elysées and Hôtel Camille Paris Gare de Lyon. Expected to open this summer.
