This new menu, in four courses, features the major dishes created by chef Simon Havage, a cook fond of modern French cuisine. For this menu, he chose the purest produces that he thoroughly selected (seasonal ingredients, honey collected on the hotel rooftop, truffles, dried lime…) by bringing a Parisian touch that you’ve never seen before.
The Signature Menu created by Simon Havage for Café M includes:
Seasonal amuse bouche
Seabream ceviche, mango, coriander and black lemon
Baby pasta with “Prince de Paris” ham, comté cheese, seasonal truffle & meat juice
Madeleine with honey (seasonal), thyme ice cream and honey-flavored whipped cream, coming straight out of the oven
When reading this menu, we can’t resist the temptation to taste it.
As a starter, to whet the appetite, the chef concocted smoked eel (from Maison Kalios) with spinach. It’s well-seasoned, tasty and perfect to start. With the wine pairing, this appetizer is served with champagne Louis Roederer.
The starter, the seabream ceviche, mango, coriander and black lemon is very fresh and sour, just as we like it. Small detail and not any kind of detail: pomegranate. To accompany this fish, white wine obviously, some Sancerre from Domaine Reverdy et fils from 2017. A little wonder that won the gold medal at the Concours général Agricole de Paris 2018.
Servings are just perfect so that when the main course (and what a main course!) comes, we’re still feeling hungry. The baby pasta with “Prince de Paris” ham, comté cheese, seasonal truffle & meat juice come in an individual and sealed Staub casserole topped with a little pig. It’s cute. Inside, a hearty serving of pasta with cream and meat juice sprinkled with Prince de Paris ham chunks and comté cheese slices.
It’s chef Simon Havage who personally comes to grate some black truffle on each portion. Or how to make a simple dish of baby pasta gourmet. For the main course, the sommelier selected another great wine, a Crozes-Hermitage red wine.
Champagne is back with dessert, the madeleines with honey collected on the hotel rooftop, thyme ice cream and honey whipped cream, straight out of the oven. Madeleines are perfectly cooked, the thyme ice cream is very refreshing to wrap this meal up.
You guessed it, we enjoyed ourselves with this menu. The wine pairing includes 4 drinks, careful if you’re driving.
The Signature Menu is only available at dinnertime, Monday to Friday. It costs €65 to which you can add €20 for the wine pairing.
