Every year, pastry chefs have to work twice as hard to surprise and seduce gourmet taste buds and lovers of yule logs.
This year, Best Craftsman in France and pastry chef Yann Brys decided to draw inspiration from the magic of Christmas to create the Plume de Noël [Christmas feather], a sumptuous and gluten-free creation covered in white.
On the theme of lightness, Yann Brys’ Christmas feather reveals a clean design and a velvety aspect forecasting sophisticated and wonderful flavors.
And we lived out a very lovely experience while tasting this yule log by discovering a crispy cereal base topped with an almond biscuit and a Madagascar vanilla cream, the whole brilliantly mixed with mango and calamondin.
To enhance the whole, the Christmas feather hides a caramel and milk chocolate cream perfectly blending with the soft caramel fondant.
