For this Christmas 2019, the oldest patisserie in Paris signs a beautiful collection of yule logs: 8 classic-looking yule logs inspired by the greatest classics of French pastry. On the menu? Opéra, Sachertorte, Saint-Honoré, Lemon Pie, Mont Blanc, Russian cake and even rum baba for a delicious moment at the end of your meal!
In this house a bit forgotten by Parisians, Jeffrey Cagnes tries hard to innovate while sticking to tradition and it includes renewing ingredients, textures and lots of researches. These yule logs are perfect for a meal during which granny is always complaining about “pastry chefs’ inventions” and wants a “genuine and traditional cake”.
Here are the eight yule logs 2019 to enjoy by Stohrer:
The Lemon Pie yule log, very sour with lime confit, whipped yuzu ganache and lime cream. This lemon pie will delight lemon meringue pie lovers while very sour lemon pie purists may reproach it with its lack of crunch!
The Saint-Honoré is a sure bet in the pastry world with light flavors, perfect for a dessert. With this yule log version – that is very beautiful – the vanilla-caramel mousse is a bit too strong and we miss the outer choux even though mini choux are hidden in the mousse and ganache.
The Sachertorte is the perfect yule log for kids: with its chocolate mousse look and its soft cake soaked in vanilla, it’s delicious and we want to eat it all. Even though the yule log is based on dark chocolate, it’s not too strong and children may ask for more.
The Russe is a gem likely to delight very sweet hazelnut praline fans! With its hazelnut-almond praline mousseline topping Piedmont hazelnut dacquoise, the whole covered with hazelnut whipped cream, it’s hazelnut paradise… We can say it’s delicious and tasty and quite caloric, but it’s okay since it’s once in the year!
Moreover, Jeffrey Cagnes took over the Opéra, Black Forest, Mont Blanc and Rum Baba, and they all are flavorful. To enjoy them, the chef recommends letting the yule log in the fridge up to the very last minute to make sure it’s cold enough, 4 to 5°C!
Of course, these presentations reflect our own taste only and we recommend trying Stohrer pastries in store to make yourself an idea of the yule log version.
They are all available for 4, 6 8 and 10 persons, these yule logs can suit any size of family. We recommend ordering two or three to make everyone happy especially if there are kids of rum baba lovers (kids being excited enough the day before Santa Claus comes, you don’t want to make them even more with a bit of rum!)
