Yann Couvreur, the much-loved young pastry chef who has worked in top restaurants such as the Park Hyatt, the Burgundy and the Prince de Galles, continues his ascent and opens a second patisserie on rue des Rosiers, just a stone's throw from Saint Paul and Place de l'Hôtel de Ville.
A new spot for take-away products. No less than 4 points of sale open up in this long store. We start with the viennoiserie section on the left, featuring the chef's famous Kouign-Amann and other rolled brioches. On the far left, a window displays fresh salads, fresh juices, gazpachos, fruit salads and spoon-fed desserts. There's also a fine selection of teas and coffees for you to enjoy on the premises or to take away. It's the ideal spot for breakfast.
We then move on to the middle display case, featuring all the chef's current pastries. Here you'll find the famous rectangular éclairs, the sublimely delicious lemon tart, the famous Merveille au Praliné, as well as novelties like the light apricot cheesecake, the pistachio-cherry Merveille and the Baba au pêches. These are real treats that you're going to have to try expressly because they're so good.
Opposite the counter, a few seats await you along the window. You can also choose to sit on the terrace in front of the window, overlooking the pedestrian street.
From both inside and outside the boutique, you can see how our delicacies are cooked and made. To the right of the store are 2 takeaway counters. This patisserie is all about street food. Knowing that the Rue des Rosiers is well known as the stronghold of falafel takeaways, it's not surprising that Yann Couvreur decided to bet on this practice.
Accustomed to making minute desserts, in this new place he puts the accent on his famous "fugues", his desserts assembled on demand. So, no need to wait in line like the others, just order and go. Vanilla millefeuilles, fruity pavlovas and other desserts of the moment await you, a welcome change from the usual crepes and waffles.
On the far left, the second takeaway counter opens onto another novelty: homemade ice creams and sorbets! Strawberry-verbena, chocolate-fleur de sel, lime-mint and mango-coriander are just some of the seasonal flavors you'll find here. And yes, in this new location, you'll be able to enjoy gourmet, hand-crafted ice creams created by the chef.
