ABRA: Tal Spiegel's Unique Bakery in the Heart of Paris's 4th Arrondissement

ABRA, Tal Spiegel's first patisserie, opens its doors this Wednesday, June 24, 2025, in the 4th arrondissement of Paris. Imagine a singular place that blends graphic design and French patisserie. You'll discover pastries that are as beautiful as they are tasty and well-balanced, changing viennoiseries and ephemeral, gourmet plated desserts.

Behind this address is Tel Aviv-born pastry chef and designer Tal Spiegel, known for his Instagram account @Desserted_in_Paris, where he pairs his pastry creations with his shoes, followed by nearly 300,000 followers. After studying graphic design in Israel, he moved to Paris in 2015, trained at the Ferrandi school and became a consultant pastry chef. He went on to collaborate with prestigious houses such as LVMH, Reebok and Mitsubishi. For those who remember, he already opened an ephemeral patisserie in 2022. This time, it's staying, and you're in for a treat.

With ABRA, Tal Spiegel has given concrete expression to her desire to merge her two passions. The boutique, designed in collaboration with designer Ron From and architect Nicolas Frances of the iCNOS agency, is inspired by the Bauhaus movement, with its primary colors and minimalist design. A glass roof overlooks the laboratory, allowing visitors to watch the pastry chefs at work.

The creations are just like the chef: bold and graphic. The lemon tart takes the form of a yellow citrus press, the Petit Beurramisu marries Petit Beurre and tiramisu, a good tonka and poppy flan, the Midnight in Paris entremets and its hazelnut skyline is a nod to Woody Allen. We loved the circus dome with its popcorn and caramel flavors. Viennoiseries, cookies, chocolate bars and specialty coffees are also on the menu.

We have to admit, we were rather skeptical before we went. Sometimes beauty comes at the expense of goodness, and we imagined super-sweet white chocolate desserts and pastries that stuck together. However, we were pleasantly surprised to find that the pastries were light, as sugar-free as possible, with a very nice balance of flavors.

You'll also discover original viennoiseries and ephemeral desserts such as the Malabi: dark chocolate mousse, crème fraîche, cocoa nibs, kadaïf, olive oil and light homemade red fruit coulis. We loved it.

The ABRA patisserie is open Wednesday to Sunday, 9am to 7pm. A great discovery for sweet and design lovers, right in the heart of the Marais, a stone's throw from Place Saint-Paul. Pastries cost between €9 and €11. Happy gourmet discoveries to all!
