On September 21, 2025, the Chambre des Métiers et de l'Artisanat, in collaboration with the Fédération de la Boulangerie-Pâtisserie de l'Essonne, revealed the long-awaited winners of the department's best patisserie competition for 2025. And it's in Saint-Germain-lès-Corbeil that you'll have to go to taste the creations of the overall winner.
Le Pain Sucré, located in the La Croix Verte shopping center in thisEssonne commune south-east of Paris, not far from Corbeil-Essonnes, won a well-deserved victory. Jérémy Leygue, manager of this bakery and patisserie since 2019, convinced the jury with his technical mastery. It's a fine revenge for this pastry chef, who took second place last year, and made a name for himself in 2022 when he took part in"La meilleure boulangerie de France" (France's best bakery) on M6.
For this fourth edition of the prestigious Essonne-based competition, candidates had to present a batch of 5 operas and 5 chocolate éclairs, two great classics of French pastry-making. Technical pieces requiring perfect mastery of puff pastry for the opera and choux pastry for the éclair, as well as a subtle balance of chocolate flavors. The panel of judges assessed all the entries according to strict criteria defined in the competition rules: visual appearance, finesse of execution, texture and, of course, taste quality. These requirements are similar to those of the competition for the best almond galette in Essonne , won this year by La Leuvilloise.
The Bedouet bakery, located on rue Pierre Brossolette in Sainte-Geneviève-des-Bois, already highly appreciated by local residents for its breads and viennoiseries, now confirms its pastry-making expertise. As for Fabrice Pottier, this Master Craftsman already crowned best pastry chef in Île-de-France in 2017 and holder of multiple Papilles d'Or labels, remains a sure bet in the Essonne region. His Maison Pottier is listed by Essonne Tourisme as one of the department's must-visit addresses.
But the competition doesn't just reward entrepreneurs.

Le Pain Sucré is no stranger to success. This family-run business, born of the partnership between Jérémy Leygue and his sister Maryne, has rapidly established itself on the Essonne gourmet scene. Jérémy, who trained with Cyril Lignac, brings a creative, modern touch to his creations, while respecting the fundamentals of French pastry-making.
