Yuki and Lumi, at the helm of this crossroads of Franco-Japanese influences, offer a series of parfaits glacés to enjoy on the premises or to take away. Their promise: a sensory voyage through melting, crunchy textures and delicate aromas. On other days, the house offers scoops in original flavors: hojicha, matcha, chocolate, yoghurt-mint, buckwheat, rum-raison or strawberry, as well as blueberry and fromage blanc or strawberry-coconut esquimaux.
At this address already renowned for its pastry creations with a Japanese accent, the parfaits glacés are the continuation of a culinary proposition thought out with precision. Each composition is assembled in successive layers, revealing a mastery of temperatures, textures and taste balance. The duo works with carefully selected ingredients: top-quality matcha, seasonal fruit, artisanal beers and carefully sourced dairy products.
We've fallen for the Matcha parfait, which reveals a whole range of textures and flavors: a muscovado sugar panna-cotta base, topped with matcha warabimochi, a kinako crumble and two tea ice creams(hojicha and matcha). Green tea jelly adds a fresh vegetal note, while mitarashi dango, a small mochi topped with sweet soy sauce, adds chewiness to the whole. We love the balance between bitterness, sweetness and umami.
The fruitier parfait Fraise combines Madagascar vanilla ice cream, strawberry sorbet and ribot milk ice cream. It is enhanced by a balsamic-strawberry-basil coulis, Madagascar black pepper meringue and a puff pastry stick for a crunchy touch. A well-balanced combination of freshness and indulgence.
For fans of classic flavors, Parfait Pêche Melba revisits a classic. Beneath a verbena chantilly, a whole peach is stewed and placed on a duo of vanilla ice cream and yoghurt-verbena sorbet. Red wine raspberry sauce and caramelized almonds add unexpected depth.
More daring, the Choco-Bière parfait combines India Black Ale ice cream from the Croix de Chavaux brewery with chocolate ice cream. It is accompanied by vergeoise panna cotta, chocolate crumble, crêpes dentelles, oat nougatine and beer jelly. A dessert that plays with bitterness and sweet roundness.
Prices range from €14.5 to €15, a price justified by the generosity of the portions and the quality of the products. This makes Saturdays the ideal day for an ice cream break off the beaten track, in this cool little spot in the heart of the 11th arrondissement.
