In Paris, there are many fans of Pierre Hermé, the pastry genius famous for his macaroons and his constant quest for new flavors. Good news for sweet tooths and ice cream lovers, the pastry chef's frosted creations await you all summer long. So what flavors will refresh our taste buds this scorching season?
Maison Pierre Hermé Paris applies its high standards to a range of ice creams and sorbets. Each flavor is available in individual tubs at €8 to take away and €9.50 on the premises, in 500 ml formats (€22), or by the scoop (€3.50). In tearooms, ice cream sundaes are served à la carte for €15.
Summer 2025 features three flagship ice creams. The Coupe glacée Ispahan pays tribute to one of the chef's signatures: rose, raspberry and lychee. It features a raspberry coulis, fresh raspberries, lychees in syrup, two scoops of raspberry sorbet and one scoop of lychee sorbet with rose. All accompanied by a light chantilly cream and mini pink macaroons. It's a marriage we love: the freshness of the lychee with the pep of the raspberry and the subtle taste of the rose, it's a must-try.
Coupe glacée Montebello, a more vegetal and textured version, combines strawberry and pistachio. It features a strawberry coulis, chunks of fresh strawberries, two scoops of strawberry sorbet and a scoop of pistachio ice cream. Caramelized pistachios, a creamy chantilly, mini verbena macaroons and half a strawberry finish the cake. It's gourmand and regressive, hard not to fall for it.
The gourmet Coupe glacée Chloé features chocolate in contrast to raspberry. A base of crushed raspberries, two scoops of chocolate ice cream, a scoop of raspberry sorbet, fresh raspberries, chocolate whipped cream, mini chocolate macaroons and a burst of chocolate for crunch. The whole is balanced and generous, perfect for lovers of intense contrasts.
At the same time, flavors to take away or enjoy on the spot are continuing to develop. Among the new products, Hygge sorbet combines Quercy melon with cinnamon blossom. Arya, an Iranian pistachio and orange blossom ice cream, plays the oriental card. Pain Perdu features caramelized brioche and dense vanilla.
The house also offers its great classics: Ispahan sorbet (rose, raspberry, lychee), Montebello ice cream (pistachio and strawberry), Infiniment Chocolat (pure cocoa from Brazil) and Infiniment Praliné Noisette, enriched with caramelized hazelnuts.
The "Incontournables" and "Saveurs du Monde" assortments allow you to taste several flavors in small 160 ml jars. One brings together emblematic recipes, the other explores more distant inspirations, such as"Jardin Japonais" (lemon, morello cherry, tonka bean) or"Jardin de Constance" (coconut, lime, pineapple, vanilla).
Whether in a boutique, at home or in a tea room, Pierre Hermé's ice creams are sure to delight you this summer with a refined, gourmet interlude.
