The Lancaster’s patio: a Provençal summer in the heart of Paris

Just steps from the Champs-Élysées and the Arc de Triomphe (8th arrondissement), push open the carriage doors of the Lancaster, and leave Paris behind. The patio becomes a Provençal haven, lemon trees in pots, the scent of lavender, and a golden light that stretches into the evening. A different tempo. The tempo of vacation.

Under the signature of Chef Sébastien Giroud, the menu pays homage to Provence: Monsieur’s bouillabaisse, Provencal osso buco, bayaldi of confit vegetables with pink garlic... Dishes that evoke long lunches under olive trees and gatherings that linger. At sunset, the patio comes alive with tapas and shareable tartinades: eggplant caviar with Parmesan, black olive tapenade with bagna càuda, Provençal octopus, and anchovies marinated with capers and fresh tomatoes. The Mediterranean makes its way to the table, right in the heart of Paris.

Composed of ten original creations, the “Hexagon” menu celebrates the richness and diversity of terroirs, traditions, and know-how that shape the identity of French distilleries. Each cocktail tells a story, that of a region, an iconic ingredient, or a house of spirits chosen for its artisanal commitment.

The journey takes you from the Southwest to the Northeast, then from the Northwest to the Southeast, traversing distinctive eaux-de-vie, exclusive liqueurs, botanical gins, and iconic aperitifs. Each stop reveals a facet of French heritage reimagined with the creativity that is the signature of the CopperBay Lancaster.

To extend the experience, a glossary accompanies the menu, spotlighting around fifteen French distilleries. The history and production methods help both enthusiasts and connoisseurs better understand the spirits behind their cocktails and explore the richness of this artisanal heritage.

Among our signature creations, you’ll find these:

• Kir à la Royale: A twist on a quintessential French apéritif, pairing Abstract Monochrome Raspberry, Chamberyzette and Deutz Champagne.
• Suzette à l’Anis: An anise-forward sour inspired by the mauresque, blending Fenouillette de Brive Denoix, anis distillate from Mette, lemon, orgeat and tonka bean.
• Bloody / Snapper: A spicy, indulgent take on the classic, built around BB13 gin, Mette pink garlic distillate, Combier Kummel, hot sauce with pastis, tomato and Dijon mustard.
• Stringer à la noix : A vintage cocktail featuring emblematic spirits from the Southwest, based on Ferrand Cognac, Giffard Menthe Pastille, Denoix, Quinquinoix and Antésite.
• Tomato Monaco: A saline, contemporary revisitation of a French bistro classic, built with the remarkable Cazottes tomato liqueur and blonde beer.
