This young pastry chef, a rising star in French pastry arts, continues to impress with her internationally acclaimed talent. Formerly the head pastry chef at some of the world’s most luxurious hotels, she has skillfully turned her rich experience into authentic yet modern creations.
This year, her frangipane galette is winning everyone over, crafted with a reversed puff pastry that is both decadently flaky and delightfully light. This demanding technique highlights the use of AOP Charentes-Poitou butter and organic ancient grains, elevating each bite to something special. It even topped the charts of the Parisian’s best galettes last year.

In addition to the classic frangipane, two new creations join the party: a clementine-vanilla galette and a chocolate-coconut galette, ideal for those in search of the exotic. Starting at just 36€ for six people or even less per serving, these Galettes blend craftsmanship with carefully selected ingredients. Each one is a tribute to her early days at Meurice, the Ritz, and the Shangri-La, where she perfected her craft. Her victory in 2014 on France 2’s Who Will Be the Next Great Pastry Chef was the springboard to a remarkable career, earning her international acclaim.
After dreaming of settling in California, Ophélie Barès chose to put down roots in her childhood neighborhood of Bécon, where her boutique has become a landmark. This local success story, driven by delicate, original creations, confirms her status as a passionate craftswoman.
The King Cake by Ophélie Barès, available at Pâtisserie Encore, offers a delicious blend of tradition and innovation. It’s a must-try for both purists and those eager to explore new flavors. The bakery is open daily from 7 a.m. to 8 p.m., and until 1 p.m. on Sundays.
