A new wine-focused venue is set to open its doors in Paris. In early September 2026, Public will take over Rue Choron in the 9th arrondissement, featuring a curated wine cellar, a kitchen crafted by two culinary professionals, and a music program designed to prolong the evenings.

The Parisian wine bars scene is getting a fresh addition this autumn. In early September 2026, Public will open in the 9th arrondissement of Paris, with the aim of bringing together in one spot a curated wine list, refined dining, and a welcoming atmosphere. Set in a neighborhood already famed for its restaurants and bars, the venue plans a format that mirrors the evolution of wine bars in the capital—valued as much for their cellars as for their culinary offerings.

Indeed, far from being limited to sampling a few drinks, these venues—growing ever more prominent in the capital—now highlight the work of winemakers, food-and-wine pairings, and a cuisine often more sophisticated than in the past. It’s within this dynamic that Public operates, pairing wine expertise, gastronomy, and a festive program all in one space.

At the helm of this new address, we find Charley Breuvart, a chef who previously cut his teeth at Ardent, who will craft a menu of dishes designed to pair with the wines. By his side, Léo Algret, a sommelier-chef who has honed his craft at the Peninsula Paris, will oversee a wine list that is billed as particularly cultivated.

And the experience won’t stop at the plate and the glass! Public also plans DJ sets to liven up the evenings and evolve the ambiance as the night goes on. A large terrace will complete the package, with the aim of enjoying the lovely late-summer and early-fall evenings!
