A discreet figure on the French pastry scene, chef Sébastien Serveau has just opened his own patisserie-chocolaterie in the Paris region. Named Pâtisserie Fine and located in Versailles, this sweet new spot is the fruit of a close collaboration between the pastry chef, his wife Barbara Serveau and designer Sylvie Amar .
A candidate in more than 30 national and international competitions, and winner of numerous awards, Sébastien Serveau has worked in the kitchens of many of the world's great Houses - the Ritz, the Costes group, Jean-Paul Hévin, Dalloyau.
At Pâtisserie Fine, sweet wonders are prepared using the finest raw materials: IGP Piedmont hazelnuts, Valrhona chocolate, Charentes Poitou PDO butter, Madagascar and Tahiti vanilla, free-range eggs, flour from Moulin de Versailles and coffee from Saveurs des Comptoirs.
Note that the laboratory is located at the back of the boutique, so all creations are imagined, created and sold in the same place.
At Pâtisserie Fine, two gourmet worlds come together. The Pâtisserie world, with classic and modern pastries in small cakes and to share, macaroons, travel cakes and petits fours; and theChocolate and Confectionery world, with pretty boxes of chocolate bonbons (ganaches, pralines, caramels...), tablettes chocolat grands crus, truffles, chocolate delicacies, spreads, caramel spreads and other jams.
Let's take a look at some of our signature creations: the Lady Grey (divine with its blend of chocolate and the power of earl grey), L'Orangerie and Saint Louis, as well as the Montblanc éclair, the Tarte citron, the Mille-feuille and a Tarte chocolat!
