Some of you already know La Sphère Gourmande, an online click & collect patisserie based in Saint Maur des Fossés (94). Since this Tuesday, November 22, 2022, Thomas Jimenez's pretty, round pastries have been available in Paris at 5 rue Montmartre in the 1st arrondissement.
For the record, Thomas started out at La Réserve in Nice alongside Chef Guillaume Sinden. He then took part in the Best Apprentice of France competition, where he won a string of gold medals. After perfecting his skills in Switzerland in various palaces, notably as head pastry chef at the "Tout un monde" restaurant, he finally settled in the Paris region, where he launched his Sphère Gourmande concept.
The chef's concept is to make you roll with pleasure. Through his spheres, he reinterprets pastry classics with a touch of originality. From Baba au Rhum Passion, which will leave you... From the Baba au Rhum Passion that will leave you... baba, to the Mont Blanc that will make you melt, to the regressive chocolate praline peanuts and the sublime coconut, you're in for a real treat.
On arrival, you discover a pretty little white store with stone walls. There are no counters like in a traditional patisserie, but 3 display cases on each side for tray service.
In addition, there are pretty seasonal tarts and tartlets, Koki'Balls, unique and original creations stuffed with different textures and pralines of all kinds, and entremets to share.
