Calling all lovers of new experiences! From May 16 to September 20, 2026, Fumo is setting up in the Marais an experimental ice-cream pop-up with a central idea: to lift ice cream out of the realm of sweet desserts and turn it into a field for culinary exploration. An original project that bets on seasoned ice creams, conceived as fully fledged creations.
In practice, each creation rests on a artisanal frozen base, ice cream or sorbet, complemented by unexpected toppings and seasonings that move the goalposts on the classics. Among the touted ingredients are olive oil, burnt rice, wasabi seeds, the Espelette pepper, cardamom, and pepper.
The objective is to make cold, texture and umami speak to each other in creations designed as courses. For the ice creams, Fumo relies on the expertise of Terre Adélice, the French artisanal ice-cream maker that works with ingredients sourced from organic farming.
This first collection was designed in collaboration with Tessa Ponzo, the pastry chef at the excellent Irwin and recently honored by the Michelin Guide’s Prix Passion Dessert in March 2026, who signs 3 recipes for the occasion. Fumo plans, going forward, to enlist other female chefs to devise new creations.
Another pillar of the concept, the pairing occupies a key role in the experience on offer: each ice cream can be paired with a beverage to extend the tasting — at the moment, ArchiPel-branded kombuchas. So, do we take the plunge into salted ice cream?
