In Seine-et-Marne (77), just steps from the base de loisirs de Buthiers, a new spot has opened its doors at the end of April 2026: la guinguette de Buthiers. Nestled right in the forest, amid the rocks, it offers around a hundred seats in a surprisingly natural setting. Fast-casual dining, drinks and live concerts on Sundays: the concept is straightforward, and by all accounts it’s already drawing a solid crowd.
Behind this project lies Yannick Billard, already well known in the scene for developing the terrace at Moulin à Nemourss, on the banks of the Loing. Here, it’s a completely different vibe: no water, but rocks, trees, and light filtered through the canopy. "Honestly, it’s an extraordinary spot… it’s paradise," he tells Actu.fr. The entrepreneur sums it up simply: "We’ve got the two best spots: water in Nemours, the forest here."
The guinguette of Buthiers is run by Auberge Canard, a historic village inn the town wanted to preserve. The previous operator was about to leave, and the site's future looked uncertain. A meeting between Billard and Mayor Christophe Chamoreau changed the outlook. Rather than reverting to a classic model, the project evolved into a mixed operation: traditional dining on one side, guinguette accessible on the other. The four longtime staff were able to keep their jobs, joined by seven to eight seasonal workers during the summer season.
On the plate side, the menu aims for simplicity and affordability. The snack offers options between 12 and 14 euros, while the inn continues to offer a more elaborate dining experience alongside. A rotisserie has also been installed for takeout, handy for visitors to the base de loisirs de Buthiers or the nearby campsite.
Every Sunday, weather permitting, a small stage hosts live concerts from 1:30 to 3:30 p.m. Theme nights, blind tests, and family-friendly activities: the schedule points to a lively season ahead. The atmosphere aims to be truly intergenerational, and the venue boasts a notable advantage: it won’t upset any neighbors. “We’re going to build a real cultural venue,” says Yannick Billard.
The layout has been thoughtfully designed: string lights, pathways weaving between sandstone blocks, shaded corners... The site has been reimagined without disturbing the surrounding environment, giving it a genuinely rare charm. From the opening evenings, about 200 people turned up, the mayor said, noting that he is "very pleased" with the launch.
