Uno, the new Italian trattoria in the Louvre neighborhood, Paris

O sole mio! Italy is coming to the Louvre neighborhood under the aegis of Uno, a new Italian trattoria where you can enjoy fresh pastas tasty pizzas and original cocktails.

Italian dolce vita is coming to Paris Louvre neighborhood with the opening of Italian trattoria Uno. Running the project, restaurateur David Soussan (Cucuzza and Le Mercier) and Tripletta – a DPO ingredient-based Neapolitan pizzas specialist.

A dream team working along with chef Julien Chevallier (Semilla, Freddy’s, Justine) who provides at Uno an Italian cuisine proud of its origins, but with a modern twist.

For instance, you can enjoy Vitello Tonnato, straciatella, anchovies from Cantabria, minestrone with young chickpeas from Sicily, 7-hour cooked lamb with taggiasche olive broth, white polenta or the peach of the day.

Big asset for Uno, pasta are fresh and can be discovered with creative recipes such as Gnocchetti sardi, tomato sauce or Tagliatelle with lemon & bottarga. And the pizza dough is fresh too so that you can enjoy tasty pizzas such as the UNO made of Fior di Latte, artichoke cream, arugula, Romano artichokes, parmesan) or the Camine (provola, parmesan, pomodorini del piennolo gialli, guanciale, basil).

On the drink list, natural and biodynamic wines are given pride of place as well as classic cocktails with a twist for more fun. We go for UNO’s signature cocktail, Airenegroni (Gin Marcoli, antica formula, airone rosso, bitter plum).

In other words, this is the Italian way of life!
