The idea was the brainchild of Guillaume Verlet and Pierre Renaud, two cordon bleu aficionados who were inspired to revisit the dish using fresh, quality produce, just like grandma's, but better.

Whethereat-in or take-away, Amonē's modernized cordons bleus, priced between €9 and €10 depending on the recipe, can be eaten on the go, in a ballotine format ideal for avoiding getting them everywhere.
