Flat Bread: Baptiste Trudel opens (at last!) his street-food shop dedicated to flat breads

After years of unbearable anticipation for street-food fans, chef Baptiste Trudel has finally opened his street-food stall dedicated to flat breads, and it's a success.

Baptiste Trudel has been teasing out his love of flat bread for years - at the Datsha restaurant where he recently took over the kitchens, and before that at the Mordu restaurant in the Marché Saint-Germain, when he was still chef there, then during the various confinements with a delivery and take-away service, Flat B, dedicated to this specialty.

Today, this young chef discovered by the general public on Top Chef is opening (at last!) his new restaurant dedicated to flat bread: Flat Bread by Baptiste Trudel, a stone's throw from Place de la République, and a whole new world of pleasure awaits street-food lovers.

For the record, flat bread is a flat bread made from flour, water and salt, easy to prepare and found in many countries around the world in different forms and recipes. Among the most famous flat breads are the Mediterranean pita, the Indian naan, the South American tortilla and the Italian focaccia.

But the flat bread we particularly like is the one served pizza-style, with a variety of toppings on top and sauce to bind it all together. And it's precisely this type of flat bread that Baptiste Trudel honors at Flat Bread, sending it into a dimension that's both airy and naughty.

To take away or at the counter of this little stall on Rue René Boulanger, the chef unveils a menu of 4 permanent flat breads and a temporary recipe - at the moment, tarama, truffles and button mushrooms (14.50€); offered at rather low prices for the quality, generosity and pleasure provided.

Roast chicken flat bread (9€) with sorrel and aioli, fried fish flat bread (12€) with watercress and tartar sauce. For our part, we've fallen for the incredible flat bread topped with a mountain ofshredded lamb shoulder (12.50€) and spiced up with honey, feta and harissa to give our taste buds a real kick.

Another pleasure is the vegetarian flat bread (10.50€), served cold, with pumpkin hummus, peppers, sesame and burrata. Two radically opposed proposals, each tasty in its own way. On the side, smash potatoes (4.50€) with wasabi mayonnaise are a real hit!

And for dessert, unique to the menu, this chocolate tartlet with Espelette chilli, salted butter caramel and caramelized peanuts (4.50€) is most enjoyable - even if we did say to ourselves, "Hey, why not offer this pastry preparation on a flat bread, too, so as to play the same score from one end of the menu to the other?
