Alla Mano, finger-fried Italian street food in Sentier

Head for the Sentier to discover Alla Mano and its Italian street-food specialties: supplì, Roman cousins not so far removed from Sicilian arancini; and panzerotti, a kind of doughnut topped like a pizza frita.

Some rather unusual Italian street-food specialties have been arriving in Paris recently, such as Neapolitan fried pizzas, highlighted at Frittza, and rot and carrett pizzas at Tribunali. At Alla Mano, you'll discover two other pillars of Botte street food : suppli and panzerotti.

Head for the lively Sentier district, and more specifically Rue Montmartre, to discover these street specialties made alla mano and eaten directly with your fingers, on the spot or to take away. On the menu, the star of Roman street-food, still little known in France, is the suppli, a cousin not so far removed from the famous Sicilian arancini, although a little more oblong, made from a risotto ball filled with good produce, then deep-fried.

The golden suppli is usually eaten in pairs, without the need for cutlery! Inside, you'll find several recipes that pay homage to essential Italian dishes, from the classic tomato-mozzarella duo (3.70€) to the spicier suppli with pepper and Pecorino (4.20€), not forgetting the suppli de la mamma with ragù bolognese and mozzarella (4.20€).

The result is a crunchy, low-fat ball, comforting tastes, cheese that goes down a treat and a lovely discovery of street food that's easy to take away and devour on the go.

The other star of the menu at Alla Mano is the panzerotto, a kind of turnover, this time from southern Italy, more precisely from the Puglia region. Filled in the manner of a small calzone, it too is dipped in an oil bath, giving it an appearance somewhere between a fried pizza and a doughnut.

On the slate, 4 panzerotti recipes, again based on codes and combinations tested and approved by fans of Italian cuisine, especially pizza: panzerotto margherita (7.90€), panzerotto regina (8.60€) or panzerotto diavola (8.60€), the recipes capture the flavors these names evoke. And the mozzarella is always running, running, running!

To add a little freshness to this tasting experience, which admittedly consists mainly of fried food, Sicilian chefs Sebastiano and Alexis, at the helm of Alla Mano, offer salads as well as non-fried dishes that are always homemade, such as eggplant alla parmigiana, lasagne and gratin with truffle oil.

But we particularly recommend panzerotti and suppli, which you won't find on every street corner in Paris!
