After creating a sensation in 2024 with her"Flocon des Rois" galette, Nina Métayer is now unveiling a collection of three galettes des rois that honor her exceptional savoir-faire. Three galettes to be discovered from January 4 to 31, 2025, in Paris at Printemps du Goût, at the Délicatisserie laboratory or at her Halles Biltoki counter in Issy-les-Moulineaux.
ForEpiphany 2025, Nina Métayer is introducing three new galettes: " La Boussole ", " L'Ambrée " (which we love) and the special " La Notre-Dame", all made with Charentes-Poitou PDO butter puff pastry and almond frangipane. For the rest, Nina Métayer has mixed subtle flavors to create three creations as beautiful as they are delicious!
Inspired by Nina Métayer's hometown of La Rochelle, this signature galette embodies a subtle balance between the traditional and the exotic. The puff pastry, made with T80 and petit épeautre flours from Moulins Viron, is enhanced by Charentes-Poitou AOP butter and DeZaan's Crimson Red and Terra Rossa cocoa powders. Traditional frangipane is combined with caramelized cocoa nibs and a crunchy almond and buckwheat praline. A True Gold cocoa tuile and gold powder finish complete this creation, which evokes the flavors of South America and Asia.
This galette revisits the traditional recipe, adding a hint of exoticism thanks to a quality rum that unfurls floral and fruity nuances. Designed for lovers of refined simplicity, it sublimates classic flavors while inviting conviviality throughout the month of January.
Created as a tribute to the rebirth of the Paris cathedral, this galette is distinguished by a rosette-shaped tile, made using a 3D printer. The flaky pastry made with Charentes-Poitou AOP butter envelops a frangipane delicately flavored with caramelized cinnamon. This balance of sweetness and spice extends the festive spirit of Christmas right through to Epiphany, while celebrating Parisian cultural heritage.
