With the heat at its peak, we head gladly to Boulevard Haussmann in Paris’ 9th arrondissement. Maison Pierre Hermé Paris has parked its pop-up on the ground floor of Galeries Lafayette Le Gourmet with a pop-up glaces open from July 2 to September 2, 2026. Dressed in stripes that wink to beach cabins, this temporary counter brings together the signature ice creams and sorbets of the House, available to take away in a cone or tub, plus two exclusives you won’t find anywhere else.
The novelty that’s sure to turn heads. The Brioche Glacée et Toastée is making its French debut in this pop-up, straight from a travel memory. Pierre Hermé says he discovered in Italy those round brioches halved, filled with ice cream or sorbet, served warm—the dramatic temperature contrast clearly left its mark.
The concept is simple and incredibly effective. The brioche is cut open, hollowed out to cradle cubes of shortbread and a generous scoop of ice cream or sorbet, then closed again, warmed for a moment, and served immediately. The warm, melt-in-the-mouth bread contrasting with the icy cold of the ice cream, with the crunch of the shortbread in the middle — this is the kind of detail that turns a sweet break into a little event. Two versions on offer: Ispahan (rose, lychee, raspberry) and Infiniment Vanille, at 8.5 euros each.
Another exclusive of the place: 100% plant-based, freshly churned ice creams and sorbets. Served via Italian-style ice cream machines, they’re lighter and silkier than traditional scoops. The lineup features Infiniment Chocolat, Ultime (Pure Origin Belize chocolate and Madagascar vanilla) and Infiniment Vanilla, plus the sorbets Lychee and Rose, Ispahan, and Infiniment Raspberry, at 8 euros for a cone or tub.
The summer 2026 ice-cream collection completes the lineup, with that marbled texture beloved by the House, where proportions shift with every spoonful and each flavor gets its moment to shine. Up next:
€9 for the 160 ml pot and €22 for the 500 ml size. Also noteworthy, a new ice-cream cart with an orange shell, designed with designer Ekhi Busquet and inspired by the layout of Japanese bentos, the fruit of three years of work and made in France.

Our take? The ice-cream-stuffed brioche delivers a warm‑cold contrast. Admittedly, full-on heat can feel a bit much, but in the morning or as a dessert, it goes down smoothly. The cones and cups of plant-milk ice cream are very refreshing, and we particularly enjoyed the chocolate, which shines when not masked by dairy. Finally, the summer collection offers some pretty flavors, like the Akiri lemon ice cream, which disappears fast. Note that the Galeries are air‑conditioned and there are a few tables at our disposal, just behind the counter.
