If there’s one chef eager to get back into the kitchen, it’s certainly Arnaud Donckele. He’s anxiously awaiting the opening of Cheval Blanc Paris and his gastronomic restaurant, Plénitude, scheduled for September 7, 2021. For over two years, this Michelin-starred chef, who previously worked at Cheval Blanc Saint-Tropez, has been fine-tuning his menu and preparing for the opening—long postponed—of one of the most exquisite jewels in the heart of the capital.
Located on the first floor of the luxurious 5-star hotel, with unobstructed views of the Seine “just within reach,” Plénitude aims to be an intimate retreat, perfect for an escape from the ordinary. Its soft, bright decor, featuring touches of yellow and orange, along with comfortable seating, hints at an extraordinary experience to come. Guests often feel as if they’re floating on a cloud, far removed from the hustle and bustle of Paris and everyday worries.
Arnaud Donckele, awarded three Michelin stars and boasting a 19/20 score from Gault et Millau, has now set up shop at Cheval Blanc Paris. He already plans to serve a menu featuring fresh, seasonal ingredients, with a strong focus, as always, on local sourcing and short supply chains.
To elevate the experience, pastry chef Maxime Frédéric, an internationally acclaimed young pastry prodigy known for his ethereal desserts, offers a perfect sweet finish to a delightful meal.
Our opinion:
Can a restaurant truly claim to be the best in Paris? If so, Plénitude is a prime contender, and our experience there was nothing short of extraordinary.
Arnaud Donckele redefines fine dining, crafting dishes that invent, surprise, and enchant. His mastery of sauces — which diners are encouraged to savor separately before each course — sets the tone for a unique culinary journey, both taste-wise and emotionally.
Plénitude is also a feast for the senses. From the chef’s table, you’ll catch the enticing aromas wafting from the kitchen, accompanied by the sounds of the brigade hard at work. You’ll feel the luxurious solid wood of the wine cellar, meticulously crafted to form an iconic custom corridor. And the tranquil decor, balanced against views of the Seine and Paris, creates a singular moment of pure… bliss.
Because every detail results from perfectly coordinated teamwork, Plénitude unquestionably celebrates the finest cuisine in Paris and across France.
