In the Batignolles neighborhood, behind the brushed stainless steel counter at Munch, Martin Courtinat puts a fresh spin on the classic bagel, inspired by the style of New York delicatessen. With a few seats for those wanting to sit down and most customers grabbing their takeaway, this spot prides itself on efficiency.

The heart of the concept lies in the bread, the key element of any great bagel. Here, it’s crafted with natural sourdough made from French organic flours. The result? Bagels that are crisp on the outside (they’re toasted fresh, right before serving), soft and chewy on the inside, perfect for holding a variety of delicious fillings.

Several variations of the bagel bread grace the menu, patiently displayed in baskets mounted on the wall. Choices include plain, sesame, zaatar, fleur de sel, or a mixed seed blend. The bagel recipes change with the seasons and the chef’s whims. Currently, the Bagel Trout Lox (€10.50) features gravlax-style smoked trout, herbed labneh, cucumbers, and pickled red onions. Meanwhile, the Zweet et Zesty Veggie Bagel (€10.50) offers a creamy, sweet-and-spicy combination with gorgonzola, honey-roasted carrots, preserved lemon, and walnuts.

More minimalist in style, the Tomato Bagel (€8) features a simple yet flavorful combination of labneh, ripe tomatoes, and basil oil—an entirely different approach from the Classic Bec Bagel (€10), which pays homage to authentic New York street food with its maple-glazed bacon, fluffy omelette, and melted cheddar. For a side, diners can choose between a fresh salad, a warm soup, or freshly cooked new potatoes.

Pushing the boundaries even further, Munch doesn't stop at savory options with its sweet bagels, like the PB&J (€5), a classic American combo of peanut butter and jam that's impossible to miss. Notably, beyond its lunchtime bagel menu, the spot opens early in the morning serving lattes and other hot drinks, along with American pastries (cookies, cheesecake, cinnamon rolls) for afternoon tea.
