Alain Ducasse has multiple projects in head… After a cookie factory – he told us about this past July – the chef is back with a temporary restaurant, opening from November 2021, within Les Ombres restaurant, perched on musée du Quai Branly.
Its name is ADMO, short for Adrià, Ducasse, Meder and Ombres, namely the names of his two partners on this project: Albert Adrià and Romain Meder, and his own name, as well as the museum’s restaurant where the temporary table comes. For 100 days, starting from November 10, the chefs launch this experimental project, created as a “high-cuisine proposition”, enrooted in Spanish and French cultures, while cutting loose though this quest for innovation dear to the chef from Monaco.
A new way to practice gastronomy and cuisine that is to comply with the naturality concept initiated by Ducasse, mixing “cereals, vegetables, and fish from sustainable fishing”, as our peers from Le Point explain. Naturality will be given pride of place and the basics remain unaltered: “adapting to the new sustainable constraints, consciously choosing to lower fat and sugar incomes, preserve direct link with season”.
As for the menu, in addition to the three famous chefs, pastry chef Jessica Préalpato will keep on working on “Desseralité”, an approached she initiated under the aegis of Ducasse. A wonderful location and a true gourmet promise we cannot wait to discover!
