Anne Coruble, named Pastry Chef of the Year 2026 by Gault & Millau, unveils her latest fairy-tale treat: the "Luminous Flower," a chocolate sunflower Easter egg conceived as a celebration of spring and childhood memories.

What inspired the design of this Easter egg at the Peninsula Paris?

We love creations that have a story behind them, and this one certainly does. Anne Coruble drew inspiration from the sunflower paintings made by her grandfather—a gentle image that evokes carefree days and the warmth of the season. Floral motifs are at the heart of her universe, which she nurtures each season with great sensitivity. This Luminous Flower takes the form of a red chocolate sunflower, its petals delicately crafted from Peruvian milk chocolate. They gently detach to be shared in a generous, almost poetic gesture.

First, we were captivated by the interplay of textures: the soft vanilla marshmallow inspired by Tahiti provides a familiar, comforting sweetness, while the crispy Linzer vanilla shortbread adds a lively crunch that keeps your attention. The rich praline, flavored with sunflower seeds and vanilla, stands out as perhaps the most original element—its toasted notes evoke the crunchiness of puffed rice and the warmth of a summer garden. Who is Anne Coruble, the Pastry Chef at the Peninsula Paris?

Since 2021, Anne Coruble has been the head pastry chef at Peninsula Paris, working alongside Executive Chef David Bizet. She honed her skills at Ferrandi and gained notable experience at Le Bristol, collaborating with Laurent Jeannin and Éric Frechon.
