There were 19 of them. 19 candidates vying for the coveted prize of France's Best Butter Croissant 2025! But like all competitions, the one organized by the Confédération nationale de la boulangerie-pâtisserie française had to make a tough choice and select the overall winner.
All the more so as the 19 candidates were each more motivated than the last. On October 7 and 8, 2025, on the premises of the Centre de formation multipro Drôme Ardèche (CFMDA), the competing bakers outdid themselves to sublimate the emblematic French Viennese product, the butter croissant.
And the rules were strict: candidates had 5 hours to showcase the best of their artisan know-how. They had to present 30 traditional butter croissants in their original shape, with a post-bake weight of 60 g (tolerance 55 to 65 g). To decide between them, the jury assessed each baker's technical mastery (hygiene, respect for steps, quality of rolling, gilding, regularity), as well as the croissant's baking, flakiness, shape, regularity, taste, crumb and fragrance.
So, who came out on top in this 6th edition of the national competition for the best butter croissant 2025? Good news for the Île-de-France region, as a candidate from the region made it to the podium. Dylan Da Silva, from the Des Racines et du Pain bakery in Clamart, Hauts-de-Seine, came third in the competition. Congratulations to Dylan! The Des Racines et du Pain bakery had already won first prize in the Best French Tradition of Greater Paris competition and first place in the Best Croissant of Greater Paris competition!
This year's prize for France's best butter croissant goes to Lilian Pensuet from the La Petite Catalane bakery in Occitanie. He is followed by Samuel Dejonghe from boulangerie Dejonghe in Hauts-de-France.
