Looking for new pastry flavors? Look no further! A new patisserie that revisits the great classics of French patisserie with Mediterranean and Middle Eastern flavors has just opened its doors in the capital's 6th arrondissement.
Named Tipana, this new patisserie is the work of Dima Al Husseini, and is part of the trend towards fusion between the great French pastry tradition and sunny flavors from the Maghreb and the Middle East, such as fig, date, pistachio and orange blossom. "For me, French patisserie combines demanding technical skills with the ultimate in refinement. The idea behind Tipana is to perpetuate this French tradition by adding a touch of Mediterranean flavors," explains the founder.
The menu at this new Saint-Germain-des-Prés patisserie features individual cakes and sharing cakes, reinterpreted around typical Maghreb and Middle Eastern flavors, such as Tarte Blida, a lemon tart with clementine zest and rosewater meringue; the éclair Méditerranée, a combination of pistachio and dates; and the El Oued pastry, a take on charlotte with dates.
But here, the star product is Tipana, an almond cookie topped with a mousseline cream, available individually or to share. Almond-based and gluten-free, the dacquoise plays with colors and flavors: praline-hazelnut, cocoa, coffee, lemon, pistachio, orange blossom or raspberry-rosewater.
What's more, Tipana invites you to indulge at any time of day: in the morning, with granola, baghrirs served with honey, slivered almonds and crème fraîche, or the Algerian version of pancakes; and at lunchtime, with salads packed with travel-inducing flavors, eggs in a variety of forms, and of course the unmissable Oriental chakchouka.
Finally, Tipana offers a selection of gourmet teas scented with dates, peppermint, rose or orange blossom; as well as chocolates, nougats, caramels and other shortbread to take away.
