This Greek chef, who has worked in Amsterdam and Edinburgh, is bringing his innovative concept to the capital: artisan cheesecakes that come in endless varieties, made with seasonal fruits, whether baked or raw, always crafted with high-quality, seasonal ingredients.
Spiro's journey seems like a natural progression toward opening this Parisian spot. Trained in Greece, he initially gained experience at the Hotel De L'Europe in Amsterdam before advancing his career with reputable Dutch establishments. Paris isn't unfamiliar territory for him, having studied pastry arts here, sharpening his skills along the way. He later extended his experience with two years in Edinburgh as a baker at the Scottish National Portrait Gallery, while simultaneously turning his online shop into a culinary blog.
Back in Amsterdam, he works as the head chef at The Sea Food Bar but still keeps busy baking cakes for friends. Buoyed by his growing success, it becomes clear: he should open a dedicated cheesecake shop. That dream becomes a reality in 2018 in Amsterdam, and it’s such a hit that French customers start urging him to set up shop in Paris. “People would come from Paris and ask me, why don’t you come over? I felt like the timing was right,” the chef recalls.
At Cheesy Cakes Paris, visitors step into a cozy space perfect for enjoying a treat on the spot or taking it to go. A counter faces the shop, and to the side, a large white ceramic table with electrical outlets offers a comfortable spot to settle in. The atmosphere is warm and inviting, almost like being at home, where you can relax and savor your piece alongside a cup of coffee or a carefully curated organic tea.
The menu features a superb selection of cheesecakes, all homemade classics. The New York Classic remains a favorite, with its smooth, creamy texture and hints of lemon and vanilla. Chocolate lovers will enjoy the Double Chocolate, which combines white and 70% dark chocolate. The Caramel & Espresso offers a perfect balance of sweetness and bitterness, while the Basque Burnt impresses with its caramelized crust and ultra-creamy center. For those seeking a lighter treat, the Fruit Cheesy spotlights seasonal fruits beautifully.
Keep in mind, you can also find savory options. During our visit, a Greek-style cheesecake was on offer.
Spiros has a penchant for playing with the seasons in his creations. In summer, you'll find watermelon cheesecakes, while winter brings flavors like pear, plum, or citrus fruits. The chef also offers limited-time specials that change regularly. Recently, he crafted a Japanese cookie cheesecake, along with variations inspired by different countries. "Every second weekend of the month, I create cakes inspired by a specific country. That's why people keep coming back — there's always something new," he explains. Among the favorites are the profiterole cheesecake, featuring profiteroles filled with cream both as decoration and within the filling, as well as the well-balanced honey cheesecake and the truffle chocolate that will satisfy any cacao lover.
The establishment also offers a gluten-free, sugar-free chocolate and date cheesecake, perfect for those watching their diet without sacrificing flavor. In terms of pricing, individual slices go for €6, a 19 cm cake (serving 6 to 8 people) is available at €32, and a larger 24 cm version (serving 14 to 16) costs €47. Hot drinks are priced between €3.50 and €4.70.
