In Meaux, Seine-et-Marne (77), Fromagerie Saint-Faron refines the art of Brie de Meaux PDO and Brie de Melun PDO like no other. In this artisanal workshop, a team of 10 experts kneads, molds and caresses its cheeses with the purest respect for tradition. Winner of the 2017 Prix d'Excellence at the Concours Général Agricole de Paris, this institution of the Paris region proudly bears the name of Saint Faron, bishop of Meaux in the VIIᵉ century.
The star of the house? Brie de Meaux Terre de Meaux: raw milk selected from 12 local producers, hand-molded in two stages and matured for a minimum of 7 weeks. The cast also includes Brie de Melun AOP, with its distinctive character, and the unmissable Triple Crème Saint-Faron, named best cheese in the world 2025.
The good news? You can see it all, smell it all, taste it all. The cheese factory opens its doors for immersive guided tours, Tuesday to Saturday, with tasting included. Take a tour of the cheese-making process, watch educational videos and get a privileged glimpse of live production, mainly on Tuesday, Wednesday and Thursday mornings. In the afternoon, watch the cheeses being turned, the secret choreography of perfect maturation. End your visit with a stroll through the boutique.
