From now on , there will be no more added nitrites, additives, or allergens such as bread, eggs, or milk in MOF charcuterie. Instead, there will be aromatic decoctions, vegetables, and vegetable broths for even more flavor, color, and surprising textures.
What's more, Pascal Joly works with committed suppliers: the Poc Francilin is raised exclusively in the Île-de-France region, and the vegetables come from local market gardeners in Rungis.
