Bazurto, Juan Arbelaez's Colombian restaurant

A muy caliente address is set to open in June 2021 in Saint-Germain-des-Prés, and it's all down to chef Juan Arbelaez. In addition toopening a fourth Yaya Greek restaurant in Antony, chef Arbelaez is unveiling a Colombian restaurant called Bazurto!

Inspired by the Marcado Loco, the famous market of the Colombian city of Cartagena, with its thousand colors and flavors, Bazurto "revisits Colombian culinary specialties with a modern French twist", according to Juan Arbelaez .

On the first floor of the spot, you'll find an indoor patio where you can devour street food on the go, and a cocktail bar, all in a carnival setting. Upstairs, for lunch or dinner, the cuisine is more experiential, showcasing the richness of Colombian gastronomy.

And to pay fitting tribute to this colorful, festive cuisine, chef Juan Arbelaez has chosen to prepare dishes from the land and sea over a wood fire, as in a traditional hacienda. In fact, cooking over an open flame is a perfect feature of Colombian cuisine!

From June onwards, Bazurto will be serving the famous empanadas and carimanolas in a variety of recipes; the traditional ceviche of French white fish with tiger leche, choclo corn, sweet potato and coriander; the salt-crusted piece of beef laid directly on the coals and served with a chimichurri sauce; the burnt risotto with lemon caviar; and to round off the meal, the chocolate dessert with lucuma and yuca crumble.

In the evening, the atmosphere becomes even more festive and lively, with a bevy of cocktails by Maxime Potfer, such as the aguardiente, a blend of cachaca and Colombian Hoja Caoba tea, tequilla and spicy tomatillo!
